Ingredients:
1.5 cups sugar
1 cup butter, softened
3 cups sifted flour (I never sift)
1 tsp. baking soda
1 tsp. table salt
5 eggs
2 tsp. vanilla extract
1/2 cup buttermilk
6-8 (ripe to overripe)
1 cup of blueberries
1/2 teaspoon grounded cinnamon
Preheat the oven to 350ºF. Butter two loaf pans. (I just use non stick cooking spray and I spray generously.)
In a stand mixer, cream butter and sugar until light and fluffy.
Meanwhile, in a separate bowl, whisk together flour, baking soda, cinnamon and salt.
With the mixer on low, add the eggs one at a time, beating after each addition. Add the vanilla, buttermilk and bananas.
Add the flour mixture and mix until just combined and add blueberries last. Divide batter between the two prepared pans. Bake for approximately 1 hour (60 - 75 minutes) depending on your oven. Check by using a long skewer stick and poke the center of the bread. If it comes out clean it's cooked. If not let it bake a little longer. Each oven is different.
Remove from oven and turn loaves out onto cooling rack immediately. Let cool. I usually dont serve until the next day! I feel the longer you wait sit the better it tastes!
