Recipe
Ingredients:
1/2-1 teaspoon instant yeast (use more in winter time)
2 cups all-purpose flour
1 tablespoon sugar
1/2 teaspoon salt
2 cups milk luke warm milk (zapped in microwave for 1-2 min)
8 tablespoons melted butter
1/2 teaspoon vanilla (optional)
2 eggs
Blueberries: optional I throw a few in the waffles when cooking.
Pam spray or vegetable oil (for brushing the waffle iron)
Directions:
The night before: combine the dry ingredients and stir in the milk, then the cooled melted butter and vanilla.
The mixture will be very loose and make sure you put in a large bowl or container.
Cover and let it sit at room temperature overnight. If I make it earlier in the afternoon, after 3-4 hours I can place in fridge.
In the morning, beat in 2 eggs into mixture until well blended. You can add blueberries here or you can throw a few blueberries after you pour the batter in case some people any plain waffles.
Brush waffle iron with oil lightly and ladle batter on the waffle iron and bake until done (3-5 minutes). I like to leave longer so it's crispy on the outside. I also use a professional grade Waring Pro waffle maker. It's got a timer and it flips. You can find them at Bed Bath & Beyond. We registered for our wedding and we've been using it ever since!
(Whipping cream and fruit optional but a nice treat)
