Cauliflower mash

Trang Nguyen

1 head of cauliflower cut into florets
2 tablespoon of butter
1/2 cup of heavy cream or milk
1/8 cup of chopped chives
3 minced garlic cloves
4-6 pieces of chopped crispy bacon

Boil in water until cooked
Once cooked, remove all florets from the water and place into
a food processor.

In a pan, I add 2 tablespoon of butter and cook up minced garlic until sizzling. Then add 1/2 cup of creamer and salt to taste.

In the food processor, press start and slowly adds the butter, garlic and cream mixture. Slowly add until your mixture looks like mash potatoes. Depending on how big your cauliflower is, you may need more cream. Add chives at end to the mash.

Then top with crispy bacon.
