I was sick all week and all I wanted was soup! So tonight's dinner was chicken tortilla soup from scratch! I promise it's so easy to make! And I like mine spicy so I add more Cheyenne chili than what this recipes asks for! You can alter to your liking!
Ingredients:
1 pound of chicken breast - boiled shredded
1/2 cup red bell pepper
1/2 cup yellow bell pepper
10 grape tomatoes cut in 4 or 1 tomato chopped
1 small carrot chopped
1/2 brown onion chopped
3 cloves of garlic
1 teaspoon cumin powder
1 teaspoon oregano
1 teaspoon Cheyenne pepper
2 cans of chicken stock
2 tablespoon of tomato paste
1 tablespoon olive oil
Salt and pepper to taste
1 tablespoon of cilantro
Avocado
Shredded mozerella cheese
Crushed tortilla chips!
Direction:
Boil the chicken breasts with a little salt. Once cooked, shread it and set aside.
In a stock pot - sautée the garlic, onions, bell peppers and carrots. Then add tomatoes and tomato paste and continue to cook.
Then add the shredded chicken, cumin, oregano, Cheyenne and chopped cilantro. Then add your 2 cans of chicken stock and continue to cook I until it's to your liking! Season sign salt and pepper if needed.
Topping:
Freshly sliced avocados, tortilla chips and grated mozerella cheese.
