Instant Pot Stuffed Bitter Melon

This is a very traditional Vietnamese dish usually eaten with rice as a soup. My mother made this and I didn't enjoy it as a child because it was bitter but my mom made me eat it because it was good for us. Then as an adult, it's one of those meals I started appreciating when I moved out on my own. This is my first time making it in the instant pot so I tried it on 5 minutes on the steam function. It turned out perfect. No having to worry about watching it over boil over the stove top! This is the easiest way to do it!

Ingredients for filling: mix in a bowl

1 pound of ground pork
1/2 brown onion chopped
1 green onion chopped
1 small pack of vermicelli noodles (bean thread) soaked and cut up for easy mixing.
1 tablespoon oyster sauce
1 teaspoon salt
1 teaspoon sugar
1 teaspoon pepper
1 teaspoon chicken soup seasoning
2 teaspoon fish sauce
1 egg

Ingredient for the shell:

3 medium size bitter Melon.

photo Cut into 3 pieces each for a total of 9. They are about 2 inches each piece. Make sure you clean out the seeds and throw out middle and keep only the shell. Then you stuff them each with the filling above.

Instant pot:

Put all 9 pieces in the instant pot. Fill with water until covered. Add 3 teaspoon chicken soup seasoning, 1 teaspoon sugar and 3 teaspoon fish sauce. I love the broth do I fill near top of the bitter melon. But if you don't plan on eating the soup, put in at least 1-2 cups.

Here's the finish product. I also add cilantro or green onions for the soup, but that's optional.
