This is a typical Vietnamese salad. So easy to make since you just have to boil all meats and cut up veggies! Like most Vietnamese salads, it is made with shredded chicken, pork or shrimp. I picked pork (a piece of pork tenderloin or one that has a little skin, little fat and meat) and size 16-20 shrimp. Most tedious part is slicing the lotus roots. If you slice too thick, it will me tough to chew. So I like to thinly slice mine at an angle so it's still long and easy to pick up with chopsticks. ingredients: 1
Drunkin noodles with chicken
Who likes chow fun noodles or spicy drunken noodles? This is my husband's favorite! Recipe: 16 ounces thick rice noodles. The package I bought was 32 ounces but it's too much for 2-4 servings. So I use 1/2 and the other half I save for pho. The fresher the better! Do not bother trying to make this with cold noodles that you've put on the fridge. Ca kho to aka clay pot caramelized catfish
This is a very traditional Vietnamese dish. My mom made it often growing up. Tonight, I took the last of my dad's catfish from his fishing trip in New Orleans to make this. And for the record, even if you don't have a clay pot, you can still make this. I've made it in my le creuset. My clay pot has a shinny gloss so it doesn't stick like other clay pots. Instant Pot: Chicken Adobo
Chicken adobo in my Instant Pot today. Shout out to all of my Filipinos friends that has inspired this in the instant pot tonight. Most of you know I don't like dark meat, but this is the only type of meat I've ever seen in adobo, so I am sticking to the the original recipe (3 drums and 3 thighs).
