Being married to an American who grew up in New Hampshire means I have make some good ole chili sometimes! To be honest, I might love chili more than my husband does😜. The last time I made chili, I made it in a crockpot but it took too long! Especially compared to my new Instant Pot aka IP. This is a new gadget we use in our kitchen a few times a week! Thanks to our friend Carolyn and John Apostolides for the birthday gift and for making dinner on a week night faster! If you don't know what it's is, research it! You'll love it, I promise!
Ingredients for Chili:
2 pounds of lean ground beef or turkey
3 minced garlic
2 packages of McCormicks hot chili seasoning (my shortcut)
1 can of organic kidney beans (15 oz)
1 can of organic 3 beans (15 oz)
1 teaspoon garlic powder
1 tablespoon chili powder (yes I like it spicy)
1/2 large sweet onion diced (save other 1/2 for the topping)
1 can of stewed or diced tomatoes (15 oz)
1 can of tomato sauce (15 oz)
1 package 10 oz of grape tomatoes sliced in half
1 diced jalapeños
1 tablespoon ground pepper
1 teaspoon garlic powder
Salt to taste
(If you want to cut the recipe in half, you can! I had 2 pounds of ground beef so I didn't want it to go to waste so I doubled the beans and package of chili seasoning - everything else you can keep the same).
Toppings:
1 dices jalepeno
1/2 diced brown onion
Sour cream
Shredded cheddar cheese
Chopped chives
Directions:
On the Sauté mode on the Instant Pot: sauté 2 pounds of lean ground beef until cooked and add the packages of McCormick hot chili seasoning, ground garlic and chili powder. Then add 1/2 sweet onions diced and 3 cloves of garlic minced until cooked in the pot.
Then turn off sautee mode and add all the beans, diced tomatoes, tomato sauce, 1 diced jalapeño, salt and pepper to taste and mix together, close the lid and cook on chili setting for 15 minutes. Decompress and open the pot and it'll look like there's too much liquid on top. Not to worry, give it a stir! It'll thicken! But if you don't ike it thick, add a little water to dilute!
Serve with cornbread!
