Ca kho to aka clay pot caramelized catfish

This is a very traditional Vietnamese dish. My mom made it often growing up. Tonight, I took the last of my dad's catfish from his fishing trip in New Orleans to make this. And for the record, even if you don't have a clay pot, you can still make this. I've made it in my le creuset. My clay pot has a shinny gloss so it doesn't stick like other clay pots. Please keep in mind as you make this, add more or less salt, sugar and pepper to your liking. Everyone's taste buds are different. Ingredients: 1.5-2 pounds

Instant Pot: Chicken Adobo

Chicken adobo in my Instant Pot today. Shout out to all of my Filipinos friends that has inspired this in the instant pot tonight. Most of you know I don't like dark meat, but this is the only type of meat I've ever seen in adobo, so I am sticking to the the original recipe (3 drums and 3 thighs). Instant Pot (IP) Pho

First time making oxtail pho in the Instant Pot! If you don’t know what an IP is, you’re missing out! It’s an electric pressure cooker with many different functions! Do my cook time is anywhere between 45 min-1 hour total cooking time if you do quick release and remember to take out the oxtail or it will be too mushy to eat. I recently ate a Chinese restaurant and thought I should copy! Here it is!! This is my version of the famous Chinese eggplant dish but mine is with chicken instead of pork! Secret is in the beans!
