photo This is a vietnamese dish that is on almost every single Vietnamese restaurant. Like most Vietnamese dishes, it's very refreshing and flavorful. This is everything in a bowl and the best part is I can get everyone to eat a lot of green vegetables.

Only item I didn't make is the cha goi aka eggrolls because I bought it from A Chau a local SAN DIEGO, CA Vietnamese fast food joint! It's my favorite place and I'll be honest, I can't make it this good!!! So go there! You won't be disappointed! This is the address. Ask for the Vietnamese egg rolls. Ultimately, you can do just pork, just shrimp or just egg rolls if you think there's too much going on here.

Ingredients:

2-3 pounds of pork butt with skin sliced in small thin pieces and set aside in a bowl. You'll mix the marinade below (overnight works or even 2-4 hours) and then skewer onto a stick. Then grill.

2 pounds of large shrimp (16/20 size) pre-peeled and de-veined. I leave tail on. I usually say 3 shrimp per person and set aside in a bowl. I use 2-3 tablespoons of the seasoning below and then I add a tablespoon of olive oil so it doesn't try out. Then I put on a skewer - 3 per stick.

Main Seasoning for Pork & Shrimp:

I make it in large portions but keep in mind, if there's too much here, just save it in the freezer and then defrost when you're ready to use.

3 tablespoon of oyster sauce
3 tablespoon of sugar
3 tablespoon of fish sauce
4 tablespoon of low sodium soy sauce
2/3 cup of korean bulgogi bbq sauce
3 cloves (pieces) of fresh garlic minced or use micro-plane blade
1/2 cup minced lemon grass (use more if you love lemongrass)
1/4 cup sesame seeds
1 tablespoon of sesame oil
2 tablespoon of vegetable oil
2 minced shallots
1 packet of Chinese Char Siu seasoning mix

Noodles & Veggies:

vermicelli noodles (cooked as instructed and run thru cold water)
green or red leaf lettuce (sliced in small long strands)
fresh mint leaves (or any Vietnamese herbs that you like)
fresh cilantro (chopped)
cucumber -sliced in thin long strips
freshly shredded carrots
fresh bean sprouts
chopped peanuts
Sauteed green onions & oil (optional)

Fish Sauce (mix all together)

1 part (3) tablespoon of fish sauce (I use megachef brand)
2 part (5-6) tablespoon of sugar (add more or less to your liking)
1 part (3) tablespoon of lemon or lime juice (add more or less to your liking)
4-5 parts (3/4 to 1 cup) water
Add these last:
2-3 cloves of finely minced garlic
2-3 fresh red or green Thai chili pepper chopped into fine pieces
